Preparation

  1. Put the potatoes in a casserole, cover with water and add salt.
  2. Cook until tender.
  3. Drain, reserving 1/3 cup (75 ml) of the liquid. Return liquid to the casserole along with potatoes. Mash.
  4. Add maple syrup and condiments. Mix well.
  5. If desired, drizzle with maple syrup before serving.

* Delicious with grilled lamb, pork stew and veal croquettes.
